method
1. Grease four 200 ml ovenproof dishes or custard cups.
2. Warm the water and stir in the beef extract until it is completely dissolved.
3. Beat the eggs together lightly and season with pepper.
4. Stir in the dissolved beef extract.
5. Strain the custard mixture into the dishes or cups, cover with greased foil or greaseproof paper, and place on a heatproof plate or in a steamer over simmering water.
6. Cover and steam very gently for about 20 minutes until just firm in the centre. Serve in the dishes or cups.
