method
1. Cut the eggs in half lengthways.
2. Remove the yolks carefully and press through a fine sieve into a bowl, or mash with a fork.
3. Trim a small slice off the rounded side of each half white so that they stand firmly.
4. Mix the yolks with the butter, mayonnaise, salt, and pepper.
5. Add Worcestershire sauce, if liked.
6. Beat until smooth and creamy, put into a forcing bag with a 1.5cm star nozzle and pipe into the egg whites.
7. Garnish with a small piece of parsley or tomato, a slice of gherkin, stuffed olive or a radish.
8. Serve on curled lettuce leaves or watercress sprigs.
