1. Cut each slice of bread into a circle 10 cm in diameter; then cut a second round 6 cm in diameter from the centres, so that 4 bread rings are left.
2. Fry the rings in hot fat until brown and crisp on one side; turn them over, reduce the heat and break an egg into the centre of each.
3. Fry gently until the eggs are set.
4. Lift out with a broad slice and drain before serving.
