2 medium potatoes, boiled in their skins
2 tbsp olive oil
1 tbsp wine vinegar
1 large gherkin, sliced
Salt and pepper to taste
4 rollmop herrings
1 tbsp parsley, chopped
method
1. Peel and slice the potatoes while still warm.
2. Mix the olive oil, wine vinegar, salt and pepper and pour over the warm potatoes.
3. Arrange the rollmops on top of the potato mixture and garnish with chopped parsley.
