6 medium potatoes, cooked and sliced
6 large tomatoes, peeled and sliced
2 tbsp olive or salad oil
1 tbsp wine vinegar
1 tsp tarragon vinegar
1 tbsp shallot or spring onions, chopped
1 tsp sugar
Salt and pepper to taste
Small tin of anchovies, drained and chopped
a few olives, if desired
method
1. Arrange alternate slices of potatoes and tomatoes in a salad bowl.
2. Mix together the oil, vinegars, shallots or spring onions, sugar, seasoning, chopped anchovies and olives.
3. Pour the mixture over the potatoes and tomatoes. Chill well before serving.
