Belgium Potato Salad with Wine Dressing

ingredients

serves 6
1 lb (450 g) potatoes, cooked
1 medium egg yolk, raw
1 medium egg yolk, hard boiled (cooked)
1 clove garlic, crushed
1 tsp English mustard
1 tsp French mustard
salt and black pepper
1 tbsp onion, finely chopped
3 tbsp olive oil
2 tbsp wine vinegar
2 tbsp white wine
1 tbsp gherkin, chopped
2 tbsp cream
1 tsp sugar

method

to make the dressing

1. Mix all the ingredients together exept the potatoes, Extra oil, cream and sugar may be added, according to taste.

to make the salad

1. Slice the cooked potatoes and place in a suitable dish while still hot.

2. Pour the dressing over the potatoes at least 3 hours before serving.
