Sour Cream and Parmesan Filling

ingredients

serves 4
2 large baked potatoes
4 tbsp sour cream
6 tbsp whipping cream
2 tbsp Parmesan cheese
Salt and black pepper to taste
1 tbsp chives, chopped
1 tbsp parsley, chopped
2 tbsp almond flakes
Good sprinkling of paprika

method

1. Halve the baked potatoes and scoop out the flesh.

2. Mash the flesh thoroughly with the sour cream and the whipped up cream.

3. Stir in the Parmesan cheese and all other ingredients except the almonds and paprika.

4. Use these to garnish the potato mixture when you have filled the shells.
