Tomato and Currant Salad recipe

ingredients

1 lb (450 g) tomatoes
1 small onion
2 oz (50 g) 1/3 cup currants
2 tbsp (30 ml) chopped basil or parsley
3 tbsp (60 ml) olive oil
1 tbsp (15 ml) white wine vinegar
freshly ground black pepper

method

1. Thinly slice the tomatoes and finely chop the onion.

2. Put them into a bowl with the currants and basil (or parsley).

3. Beat the rest of the ingredients together to make the dressing and fold it into the salad.

4. Tomato salads are best served as soon as they are made.
