Chocolate Glace Icing

ingredients

enough to coat the top of one 18 cm cake
2 oz (50 g) plain chocolate
1 tbsp water
2 tsp spoons butter
7/8 cup (100 g) icing sugar (confectioners sugar)

method

1. Grate the chocolate into a small, heavy based pan.

2. Add the water and butter.

3. Warm very gently, stirring thoroughly until the mixture is smooth and creamy.

4. Sift the icing sugar and stir it in, a little at a time, adding a little extra water if necessary to make a coating consistency.

The icing will thicken as it cools.
