Spicy Spanish Potatoes recipe

Tapas' are snacks that are served as appetisers in Spanish bars, and this dish is a typical savoury tapas. Passata is a sauce made from sieved and strained tomatoes, and it is available from large supermarkets in jars and cartons. Alternatively, you can substitute 1 pint (570 ml) of tomato juice. This dish is delicious warm or cold, and can be served on its own as a snack with wine or sherry. It also goes well with salads or grilled meats, to make a tasty main course.

1. Wash the potatoes thoroughly and remove the skins if desired. Finely chop the onion. Heat the oil over a medium heat in a shallow saucepan and add the onion, paprika, cumin seeds and cayenne pepper.
2. Saute for 5 minutes, until the onion is transparent.
3. Add the potatoes to the saucepan and stir well, then add the passata with 1/2 pint (285ml) of water, or 1 pint (570 ml) of tomato juice, and bring to the boil.
4. Reduce the heat, add a little salt and simmer gently for about 20 minutes until the potatoes are tender and the sauce has reduced. Spoon into a dish, season with salt, sprinkle with parsley and serve.
