1. Place all the ingredients, except the peaches, in a large wide pan with 900 ml (1 1/2 pints) of water. Bring to the boil and bubble for 5 minutes. Add the peaches (in a single layer), return to the boil, cover and simmer for 5 to 10 minutes, or until the peaches are almost soft (the cooking time will depend on their ripeness). Allow to cool in the syrup.
2. Lift the peaches out with a slotted spoon and place in a glass serving bowl. Strain the liquid, reserving the flavourings. Bring the syrup back to the boil and bubble for 20 minutes or until reduced by half and turned syrupy. Cool and pour over the peaches in the serving bowl and decorate with the reserved flavourings.
