Buttered Carrots

ingredients

serves 4
1 kg (2 lb) carrots
salt and pepper
50 g (2 oz) butter
chopped parsley to garnish

method

1. Peel the carrots and cut into four lengthways, then cut each quarter into 5 cm (2 in) strips. Bring a saucepan of salted water to the boil and cook the carrots for 10 minutes. Drain well.

2. Heat the butter gently in a large frying pan. Cook the carrots in the butter for 5 minutes until tender.
Season to taste and garnish with chopped parsley.

Microwave Tip
Put the prepared carrots and butter in a dish with a sprinkling of water. Cover and microwave on high for about 15 minutes stirring once.
