1. Wash the tomatoes, or make an incision in the tomato skins, pour boiling water over the tomatoes and leave for 3 minutes, then peel them.
2. Cut the tomatoes into slices and arrange on a plate. Season to taste.
3. Finely chop the onion and garlic.and sprinkle over the tomatoes. Beat together the oil and vinegar and pour over the tomatoes, then garnish with chives if liked.
