method
1. Skin the drumsticks, slit along the flesh of each and ease out the bone.
2. Mix together the peanut butter, 25 g (1 oz) peanuts, the lemon rind, lemon juice and the onion.
3. Open out the boned drumsticks and spread a little of the mixture on to each. Fold together again.
4. Mix together the beaten egg, parsley, remaining peanuts and seasonings. Season the flour and roll each drumstick in it, and then coat in the egg mixture and thread on to skewers.
5. Oil a piece of foil, put the kebabs on it and place on a baking sheet. Cover loosely with foil and bake at 190°C (375°F) mark 5 for 45-50 minutes. Uncover for the last 10-15 minutes of cooking time.
