Sweet and sour Brussels sprouts recipe

information

When buying Brussels sprouts, choose ones which are small, compact and a good green colour with no signs of yellowing. If buying sprouts packed in a polythene bag from a supermarket, make sure there are no signs of mould on them. You can serve this unusual dish of Brussels sprouts in place of ordinary boiled sprouts with roast or grilled meats.

ingredients

700 g (1 1/4 lb) fresh Brussels sprouts, or 500 g (1 lb) frozen
50 g (2 oz) margarine or butter
1 medium onion, finely chopped
2 Cox's Orange Pippin apples
2 tablespoons seedless raisins
3 tablespoons lemon juice
3 tablespoons clear honey
salt and freshly ground black pepper

method

1. Cook the sprouts in boiling salted water for about 10 - 15 minutes until just tender. If using frozen sprouts, cook according to packet instructions.

2. Meanwhile, melt the margarine in a saucepan, add the onion and fry gently until soft but not coloured. Peel, core and chop the apples fairly. coarsely, then add to the onion with the raisins and stir well. Season well with salt and pepper.

3. Mix together the lemon juice and honey and pour into a serving jug.

4. When the sprouts are cooked, drain well, add to onion mixture and stir well to mix. Transfer to a serving bowl pour over the sauce and serve.
