1. Heat the grill to high.
2. Cut the pineapple lengthways into quarters, slicing through the green crown. Cut out the core and
loosen the flesh. Wrap foil around each crown.
3. Arrange the pineapple quarters in the grill pan. Sprinkle each quarter with 1 tablespoon sugar and dot with butter. Grill for 4 - 5 minutes until the pineapple is heated through. Transfer to warmed dishes and remove the foil.
4. Put the rum into a small saucepan, heat it through gently, then remove from the heat and immediately set light to it. As soon as the flames subside, pour the rum over the pineapple together with any juice from the grill pan. Serve at once.
