Ricotta Cheese with Coffee (Ricotta Al Caffe)

Ricotta cheese is a very popular cooking ingredient all over Italy, and it is used equally in both savoury dishes, such as Lasagne and sweet dishes such as the recipe below. If you cannot obtain ricotta, cottage cheese may be substituted.

ingredients

4 servings
350 g (12 oz) Ricotta cheese
175 g (6 oz) 3/4cup Castor (superfine) sugar
50 ml (2 fl oz) 1/4 cup Freshly percolated strong black coffee
50 ml (2 fl oz) 1/4 cup Dark rum
2 Walnuts, halved

method

1. Rub the cheese through a strainer, using the back of a wooden spoon.

2. Beat the sugar, coffee and rum into the cheese and continue beating until the mixture is smooth and thick. Set aside at room temperature for 1 hour.

3. Spoon the mixture into individual serving glasses and chill in the refrigerator for 1 hour. Decorate each glass with half a walnut before serving.
