to make the pudding
1. Sift flour and salt lightly, mix in the potato and suet.
2. Add sufficient water to bind into a soft dough.
3. Take two thirds of the dough and use to line a well greased 1.15 litre (2 pt) pudding basin.
to make the filling
1. Fill with layers of sliced apple, then a sprinkling of sultanas and sugar.
2. Pour over 2 tbsp cold water, cover with remaining dough, pressing the edges firmly together to seal.
3. Cover with a lid of greaseproof paper tied firmly in place with string and steam for 2 hours.
4. Do not allow to boil dry, but add boiling water when required.
