1. Wash chicken; cut into 8 pieces and dry well.
2. Peel large onion and cut into eighths. Scrape and wash carrot, clean celery, then chop both.
3. Brown chicken pieces in 2 tbsp oil, frying vegetables at same time. Add vinegar, water, thyme and 1 tsp salt, then cover and simmer for 30 minutes.
4. Peel small onions. Clean and wash broccoli before dividing into florets.
5. Take chicken pieces out of cooking liquid. Strain stock, then boil onions in it for 10 minutes. Remove from stock.
6. Boil broccoli for 10 minutes in 600 ml (1 pt) 2 1/2 cups water, then drain and cool.
7. Allow sugar to caramelise to a light brown in butter, add onions and glaze.
8. Toss broccoli in dressing made from orange juice, 1/2 tsp salt, pepper and remaining oil.
9. Serve chicken arranged on dish with broccoli and glazed onions.
