60 ml (4 tbsp) chopped mint
60 ml (4 tbsp) chopped parsley
60 ml (4 tbsp) chopped sage
grated rind of 2 lemons
120 ml (8 tbsp) lemon juice
300 ml (1/2 pint) oil
225 g (8 oz) onions, skinned and finely sliced
salt and freshly ground pepper
900 g (2 lb) fresh sardines (at least 12), cleaned
lemon wedges, to garnish
method
1. Reserve 5 ml (1 tsp) each of the herbs. Mix the remainder with the lemon rind, juice, oil, onions and seasoning.
2. Grill the sardines for 5-7 minutes each side, basting with the herb dressing. Leave in the dressing to cool completely. Sprinkle with the reserved herbs before serving. Garnish with lemon wedges.
