Stir fried Mushrooms and Beansprouts

ingredients

serves 4
15 g (1/2 oz) butter
15 ml (1 tbsp) sunflower oil
1 onion, skinned and finely sliced
450 g (1 lb) mushrooms, wiped and sliced
225 g (8 oz) mung beansprouts
salt and freshly ground pepper
grated rind and juice of 1/2 an orange
25 g (1 oz) peanuts or cashew nuts

method

1. Heat the butter and oil in a large saucepan and fry the onion for 5 minutes until soft. Add the mushrooms and fry for a further 5 minutes until just tender.

2. Stir in the beansprouts, seasoning and orange rind and juice. Cook for a further 2 3 minutes, then spoon into a heated serving dish. Sprinkle with nuts and serve immediately.
