3 tablespoons oil.
salt and freshly milled white pepper
1/2 teaspoon dried rubbed mint

Serve with: a vegetable salad of boiled cauliflower and green beans, fried green peppers, peeled tomatoes and olives.
Alternatively, you can grill the lamb cutlets. Successful seasonings include rosemary, mint, thyme, marjoram, garlic and sesame seeds, which can all be added to the cutlets as they are cooked.
