ingredients
250 g (9 oz) white cabbage, finely shredded
1 celery stick, chopped
2 carrots, grated
25 g (1 oz) raisins
1 dessert apple
2 teaspoons lemon juice
175 g (6 oz) Gouda cheese, coarsely grated
150 ml (1/4 pint) natural low-fat yogurt
salt and pepper
chopped parsley, to garnish
method
1. Place the cabbage, celery, carrot and raisins in a large bowl. Grate the apple and toss in the lemon juice. Add to the bowl with the cheese and mix well.
2. Season the yogurt with salt and pepper to taste, then stir into the salad. Pile on to a serving dish and garnish with chopped parsley.
The easiest way to prepare the white cabbage is to cut it into thin slices with a serrated bread knife, then chop the shreds to a suitable size.
