1. Slice the leeks very finely and arrange in a salad bowl.
2. Put the dressing ingredients in a screw-topped jar and shake well. Pour over the leeks, add the capers and toss well. Chill for 1 hour before serving.
A good juicy lemon should yield about 3 tablespoons of juice. If you first warm the lemon in a cool oven, it will produce more juice. Try using other types of mustard
in the dressing as a variation.
