Caramelised oranges with redcurrants recipe

A glossy caramelised orange, sprinkled with jewel-like redcurrants, is a simple, refreshing way to round off a meal. preparation 10 minutes, plus chilling, cooking time 10 minutes

method
1. Thinly pare the zest from two of the oranges, using a swivel vegetable peeler,
then cut it into very thin strips. Add to a small pan of boiling water and simmer for 5 minutes until softened. Drain and set aside.
2. Cut away all the pith and peel from the 4 oranges, using a sharp knife and keeping the fruit whole. Place the oranges in a heatproof bowl and scatter the blanched orange zest shreds over them.
3. Put the sugar, water and orange juice in a saucepan and dissolve over a low heat. Bring to the boil and cook over a high heat until syrupy. Pour the syrup over the oranges and leave to cool, then chill before serving.
4. To serve, place an orange on each serving plate and drizzle with some of the syrup and orange zest strips. Sprinkle over the redcurrants and finish with mint leaves if you like.
