1. Mix together the cottage cheese, yogurt and strawberry puree.
2. Dissolve the gelatine in the water in a bowl over a pan of gently simmering water. Cool, then fold into the cheese mixture with sweetener to taste.
3. Whisk the egg whites until stiff and fold into the mixture. Pour into a 20 cm/8 inch loose-bottomed flan tin.
Chill until set (about 3 hours).
4. Remove from the tin, place on a serving plate and decorate with the sliced strawberries.
By sieving cottage cheese you can achieve a similar texture to curd cheese but with significantly fewer calories. First press out and discard any whey.
