1. Pare the rind from one orange; squeeze the juice from-two oranges. Peel the third and chop up the flesh. Cut the pared rind into matchstick strips and simmer for 5 minutes in the honey, allspice and water. Cool.
2. Combine all the fruit, add the orange juice and rind and leave to soak to allow the apricots to soften a little.
3. Sprinkle with flaked almonds before serving.
