1. Cook the steak under a preheated hot grill for 3-5 minutes on each side, depending on thickness and personal taste.
2. Heat the oil in a large non-stick frying pan, add the onion and fry for 2 minutes. Add the carrot, potato and about 4 tablespoons hot water and stir-fry over a high heat for 3 minutes, using two large wooden spoons to turn the vegetables.
3. Add the celery, cabbage or spinach, and broccoli or cauliflower, and stir-fry for 2 minutes, adding a little more water if necessary to prevent sticking.
4. Add the mushrooms, cucumber and tomatoes and stir-fry for another minute. Add the soy sauce and stir well. The vegetables should be tender but still crisp, with a rich gravy in the bottom of the pan. Serve hot with the steak on warmed plates.
5. Stir-fried vegetables are quick, easy and healthy eating. Always start with an onion, then add any root vegetables and green leaves. Add the softest vegetable last. The vegetable juices will combine to make a nutritious sauce.
