1. Put the apples in a large saucepan with the lemon juice, cinnamon and sugar. Add 2 tablespoons of water, and then cover and simmer for
5 - 8 minutes, until they are tender. Remove from the heat and allow to cool completely.
2. Preheat the oven to Gas Mark 6/ 200°C/fan oven 180°C. Lightly spray a 23 cm (9 inch) pie dish with low fat cooking spray.
3. Line the pie dish with half the pastry sheets, spraying each sheet with low fat cooking spray, and overlapping the edges of the tin slightly. Bake for 4 - 5 minutes in the centre of the oven.
4. Spoon the cooled apples into the pastry case. Top with the remaining pastry sheets, spraying each sheet 2-3 times with low fat cooking spray. Make loose folds in the pastry so that it fits over the top of the pie dish, and then trim off any excess. Spray the surface another 2-3 times with low fat cooking spray and bake in the oven for 15-20 minutes, until golden.
5. Let the pie cool for a few minutes, and then serve, dusted with the icing sugar and accompanied by the creme fraiche.
Variation Use ground mixed spice instead of the cinnamon, if you prefer.
