Chicken Liver Pâté

Here is a smooth pate, ideal for a cocktail party. The eggs help dilute the flavor of the livers, which some people find too strong

ingredients

serves 12 to 15
6 tablespoons chicken fat
2 pounds koshered chicken livers
3 large white or yellow onions, cut in quarters
4 hard-cooked eggs, halved
1/2 teaspoon salt
1/2 teaspoon pepper

method

1. Melt the chicken fat in a large skillet and briefly saute the chicken livers over high heat until well-browned.

2. Remove livers and place in blender or food processor along with onions, hard-cooked eggs, salt, and pepper.

3. Blend to a smooth paste, then taste for seasoning.'

4. Serve with crackers or matzos.
