Spicy Chicken Kebabs with Avocado Sauce recipe

ingredients

Curry powder makes microwaved chicken more interesting. Avocado sauce provides a wonderful contrast of taste, texture and colour.
3 chicken breasts, skinned and boned

Marinade

2 tbsps vegetable oil
1 clove garlic, crushed
1 tbsp curry powder
1/4 tsp cayenne pepper
1 tbsp chopped coriander leaves
Juice and grated rind of 1 lime
Salt and pepper

Sauce

1 tbsp vegetable oil
1/2 tsp finely chopped onion
1 tsp mango chutney
1 large avocado, peeled and stone removed
140 ml (1/4 pint) plain yoghurt
2 tsps lime juice to taste

method

1. Cut chicken into strips 2.5 cm (1 inch) wide. Combine ingredients for the marinade and mix in the chicken to coat each piece. Leave to marinate for 1 hour.

2. Thread the meat onto wooden skewers and put onto a roasting rack. Cook for 5 minutes on HIGH.

3. Turn kebabs while cooking. Leave to stand, covered in cling film, for 1 minute.

4. Put the oil and onion for the sauce into a small bowl. Cook for 1 minute on HIGH, and stir in the chutney

5. Put avocado flesh into a food processor with the seasoning, yoghurt and lime juice. Add onion and chutney, and process until smooth. Serve with the chicken kebabs.
