Tomato and Caerphilly Salad recipe

Caerphilly, originally a Welsh cheese, is now mostly made in Devon, Dorset, Somerset and Wiltshire. It is soft and white with a mild, salty flavour. with sun-ripened tomatoes and a sprinkling of fresh herbs, it makes a tasty and pretty salad.

method
1. Slice the cheese (do not worry if it crumbles) and the tomatoes. Arrange on individual serving plates.
2. Whisk together the oil, yogurt, mustard, herbs and salt and pepper until well blended.
3. Spoon the dressing over the cheese and tomatoes, then serve garnished with chopped fresh herbs.
