Marrow with Tomato and Onion

Use well-flavoured English tomatoes for this recipe. Marrows are excellent cooked in a tasty sauce, as they happily absorb all the delicious herby juices.

ingredients

serves 4 - 6
25 g (1 oz) butter
2 medium onions, skinned and chopped
1 garlic clove, skinned and crushed
1 medium marrow, peeled, seeded and cubed
6 large tomatoes, skinned and chopped
30 ml (2 tbsp) tomato puree
30 ml (2 tbsp) chopped fresh mixed herbs or 10 ml (2 tsp) dried mixed herbs
salt and pepper

method

1. Melt the butter in a large saucepan and gently fry the onions and garlic for 5 minutes, until soft. Add the marrow and cook for a further 5 minutes.

2. Stir in remaining ingredients, cover and simmer for 30 minutes, until the vegetables are tender. Season to taste. Serve at once.

HAD NEVER COOKED MARROW BEFORE BUT WAS GIVEN ONE LAST YEAR AND FOUND THIS RECIPE, LOVED IT AND AM PLEASED TO HAVE FOUND IT AGAIN THIS YEAR. SUCH A DELICATE FLAVOUR BUT OH SO TASTY.

I was given a marrow and, not having cooked them many times before, wasn't full of ideas. I have found it to be quite a bland vegetable previously so I did a quick search and found this recipe. Excellent! First time I have really enjoyed marrow and this recipe gives it loads of flavour. Didn't try the chilli addition but would imagine it would improve it even more so long as you go gently with it (even though I love chilli). Don't overcook the marrow though as it can go too soft and mushy.

I added a vegetable stock cube dispersed in a little hot water. I also split the marrow in half and cooked it in hot water to soften the flesh before scooping it out to add to the the tomato and onion. Don't over cook the marrow otherwise you just get a mush.
