Hot Avocados (Microwave)

ingredients

serves 4
2 avocados
2 teaspoons lemon juice
175 g (6 oz) cottage cheese
50 g (2 oz) canned salmon, flaked
25 g (1 oz) canned sweetcorn
chopped chives

method

1. Halve the avocados, remove and discard stone, and brush flesh with lemon juice.

2. Mix cottage cheese, salmon and sweetcorn together, spoon into the cavities.

3. Place on a plate pointing inwards. Cook on HIGH for 3 minutes.

4. Serve immediately sprinkled with chives.

Timings are for a 600 watt microwave oven
