Leaf Spinach in Butter (Epinards en Branches)

ingredients

serves 10
2 kg spinach
75 g butter
salt and milled pepper

method

1. Place the picked and washed spinach in 500 ml boiling salted water, cover with a lid and boil for 5 minutes.

2. Drain well in a colander, squeeze out all moisture, toss in 75 g butter in a shallow pan using a fork, to separate the leaves. Season with salt and milled pepper and serve in a vegetable dish.
