Blackeye Beans with Spinach (Salq bi Loubia) recipe
ingredients
675 g blackeye beans
75 g chopped onion
150 ml olive oil
1 kg shredded spinach
method
1. Soak 675 g blackeye beans for 12 hours. Wash, cover with water and cook for 1 hour. Lightly fry 75 g chopped onion in 150 ml olive oil, add 1 kg shredded spinach and sweat until cooked.
2. Combine with the drained beans, season and serve hot or chilled.
