Fry 75 g chopped onion, 2 chopped cloves of garlic and 4 chopped fresh green chillies in 75 ml olive oil, cool and blend to a paste. Add 275 g chopped eggplant, 1 tsp anchovy paste, 1 tsp ground coriander, the juice of 1 lemon, 1 tsp sugar, 2 tsp chopped mint and salt. Place in a dish and bake in the oven at 170°C for 20 minutes. Serve hot or chilled.

Thai or Indonesian?

This is not a thai recipe, the name suggets that it is indonesian, because its indo langage, and so other recipes too, like sweetcorn fritters(perkedel jagung) and beef satay(satay daging)
