1. If dried apricots are used, soak them in cold water overnight.
2. Drain, then stew them gently in a very little water, if required; they may be soft enough not to need it.
3. Trim off any excess fat from the ham.
4. Chop the apricots, or peel, core, and grate the apples.
5. Mix the fruit with the breadcrumbs, seasoning, and a little sugar, if needed.
6. Beat the egg until liquid and bind the fruit mixture with it lightly.
7. Spread the mixture over half the ham slices, and make into 'sandwiches' with the rest of the slices.
8. Cut the sandwiches in half.
9. Coat them lightly with flour, and put them in a shallow, ovenproof baking dish.
10. Pour the milk and water over them, and bake, uncovered, in a warm oven, 160°C, Gas 3, for 30-40 minutes.
11. Garnish the ham with fried apple slices and serve with Brussels sprouts topped with almonds.
