1. Sift the flour and salt into a bowl.
2. Make a well in the centre of the flour, and add the egg and a little of the milk.
3. Gradually work in the flour from the sides, then beat until smooth.
4. Stir in the rest of the milk.
5. Just before using, stir well.
6. Alternatively, use an electric blender.
7. Put the milk and egg into the goblet. Add the flour and salt and blend until smooth.
8. This makes a firmer batter suitable for fish fillets, fish and meat cakes, and meat.
