1. Wash chicken breasts. Bring chicken stock to the boil. Simmer chicken in stock for 10 minutes, removing any scum that forms.
2. Trim and wash celery and leek, then chop and add to stock.
3. Poach chicken and vegetables very gently for 10 minutes longer.
4. Peel kiwi fruit and cut into 1/2 cm (Vs in) thick slices. Arrange slices in fan shaped pattern on serving dish.
5. Wash orange in hot water, then dry and peel one half very thinly. Finely shred this peel and scatter over kiwi fruit.
6. Squeeze orange and lemon.
7. Melt butter and caramelise sugar in it, then add citrus juices very gradually, stirring well.
8. Reduce sauce to 2 tbsp and season with salt and cayenne pepper.
9. Take chicken off bone, removing any skin, and cut into slices.
10. Arrange on serving dish with kiwi fruit and pour sauce over meat.
