method
1. Wash the roes carefully and pat dry with kitchen paper.
2. Toast the bread or muffins, and meanwhile heat the butter in a pan and gently turn the roes in this.
3. Sprinkle them with cayenne and black pepper as you cook them for 2 or 3 minutes until nicely browned.
4. Serve them on the lightly buttered toast or muffins garnished with quarters of lemon, and with more cayenne and black pepper to hand.
