Marinated and Barbecued pork chops

ingredients

to serve 4
4 Pork spare rib chops

For the Marinade
1 Large onion
2 tbsp Lemon juice or vinegar
2 tbsp Oil
1/2 tsp Powdered mustard
2 tsp Worcestershire sauce
1/2 tsp Salt
1/2 tsp Freshly ground black pepper
1 tsp Granulated sugar
1/2 tsp Paprika

method

1. Place pork chops in bowl. Peel and grate the onion and place in a jug. Add rest of marinade ingredients and mix well, then pour over chops. Leave to marinate for 1 hour in a cool place, turning chops at least twice. Preheat the grill.

2. Cook the chops under the grill (or on a barbecue), occasionally brushing them with the reserved marinade. Serve with mixed salad, dressed with vinaigrette flavoured with fresh dill or other herb of choice.
