1. Put the cod fillets in a shallow, non-metallic dish. Mix the lime rind with the chilli oil and rub this over the fillets. Season well, cover and leave in a cool place for 30 minutes.
2. Heat the sesame oil in a large frying pan, add the chilli, garlic, spring onions, mushrooms and carrots and stir-fry for 2 to 3 minutes, over a high heat, until the vegetables begin to soften. Add the pak choi and stir-fry for 1 to 2 minutes more. Add the soy sauce and cook for a further minute. Season and set aside. Preheat the grill.
3. Grill the cod fillets under a moderately hot grill for 2 to 3 minutes on each side or until the flesh has turned opaque and is firm to the touch.
4. Place the cod on a serving dish, pile the stir-fried vegetables on top of the cod and serve.
