Blue cheese and apricot tart

ingredients

serves 1
150 g (5 1/4 oz) self-raising flour
85 g (3 oz) butter
1 egg
2 apricots, sliced
4 basil leaves, torn
55 g (2 oz) blue cheese, crumbled
salt and freshly ground black pepper

method

1. Preheat the oven to 220°C (425°F) Gas 7.

2. Blend the flour, butter and egg in a food processor to make a dough.

3. Roll dough out onto a floured surface until thin, to form a rustic circle.

4. Place on a non-stick baking tray and lay the apricots on top. Scatter the basil leaves over and then crumble the cheese on top. Season with salt and pepper.

5. Bake in the oven for 10 - 15 minutes, or until crisp and golden.

6. Serve.
