Pears in Ginger Wine

Preparation time 5 - 10 minutes,

ingredients

serves 4
450 g (1 lb) cooking pears
juice and rind of 1 lemon
300 ml (1/2 pint) ginger wine
1/2 teaspoon ground cinnamon
50 g (2 oz) sugar
angelica to decorate

method

1. Peel the pears but leave their stalks in place. Brush the fruit with some of the lemon juice to prevent discolouring.

2. Slowly bring the wine to the boil in a large saucepan, reduce the heat, add the pears, cinnamon and sugar and simmer gently for 20-30 minutes or until the pears are soft.

3. Baste the pears from time to time and turn once during cooking. When the pears are soft, remove them to a serving dish and decorate the top of each with pieces of angelica.

4. Boil the wine remaining in the saucepan, if necessary, until it is reduced to a syrup consistency. Spoon the syrup over the pears and serve immediately with fresh cream.
