1. Arrange the lettuce leaves to cover the bottom and sides of a shallow salad bowl or dish.
2. To prepare the dressing, put the oil, vinegar, tarragon or mint, sugar and salt and pepper to taste in a screw-top jar. Shake vigorously until thoroughly mixed.
3. Peel, halve and stone the avocados and slice the flesh thinly. Put in a mixing bowl with the grapefruit segments and quickly toss in the prepared dressing.
4. Pile in the serving bowl on top of the lettuce and serve immediately.
