1. Sift the flour and salt in a bowl. Rub in the fat until the mixture resembles fine breadcrumbs.
2. Add the cheese and bind the mixture together with a little beaten egg. Knead lightly to give a smooth dough.
3. Roll out on a lightly floured surface to an oblong 25 x 15 cm (10 x 6 inches). Brush with beaten egg and sprinkle liberally with Parmesan cheese. Press the Parmesan lightly into the egg.
4. Cut into sticks 6 cm X 5 mm (2 1/2 x 1/4 inches) and place on baking sheets. Bake in the oven at 200°C (400°F) mark 6 for about 10 minutes, or until golden brown. Transfer to a wire rack to cool.
