1. Put the pears in an ovenproof dish and pour on the orange juice and red wine with the cardamom seeds. Bake in the oven for about 30 minutes until tender.
2. Taste the juice for sweetness and, if liked, add sweetener. Serve hot or chilled with the strained sauce.
3. Cardamom seeds are strongly aromatic and can be used to flavour both sweet and savoury dishes. Choose a light red wine to cook the pears.
