1. Heat the oil in a large heavy-based non-stick frying pan and fry the garlic and onions until light golden, then remove.
2. Fry the poussins, turning frequently until sealed and browned all over, then add the wine. As soon as it boils, add the water and salt and pepper to taste.
3. Cover and simmer for 20 minutes, then uncover and simmer for another 20 minutes, adding the peas and onions about 8 minutes before cooking is completed.
Frozen peas are much higher in fibre than fresh ones. Fibre is considered to be a good means of maintaining good health. It is only found in foods of vegetable origin.
