method
1. Put the rice in a large pan of lightly salted boiling water and cook for 12 - 15 mins or according to the instructions on the packet.
2. Meanwhile, melt the butter, add the onion and fry for 4 - 5 mins until soft. Add curry powder and cook, stirring, for 1 min.
3. Add raisins and almonds and stir well to combine. Drain the rice and add to the onions.
4. Cook over a low heat, stirring, for 1 -2 mins. Season and serve.
Using easy-cook brown rice will give this dish a nuttier flavour and increase the amounts of fibre and iron.
